Hello,

Does anyone know how wholemeal and white flour differ in terms of
vitamin and mineral content? Do these two flours differ in nutrition?

Also, I suspect that wholemeal flour has a lower Glycemic Index than
white flour, but I do not actually know that. Does anyone know?

Both are very high glycemic index, though a whole-grain flour will be
slightly lower, all other things being equal.

Different grains have different GIs, and different degrees of processing
make it vary. Whole grains sometimes have fairly high GI. When ground into
flour, the GI rises sharply.

White flour is devoid of vitamins and minerals, while wholemeal flour
has lot of vitamins, minerals and beneficial low-molecular organic
stuff, like betain (mostly following the bran, wheat bran may contain
up to 1 g betain/100 g bran
